The noise with your foot off the clutch is roll over noise. The lighter flywheel will amplify this noise. If they gearbox oil hasn't been touched I'd suggest dumping it and refilling it with a quality oil. The old trick with the T56 was to fill it via the reverse lamp switch. This got another 500ml or so of oil into it and made a big difference to the noise.

Give Mal Woods a call and see what fluid refill amount he recommends

Ok will do I'll give that a go, also can you buy the sealed bearing by itself from npc ect.? Or is it purely part of the kit. I'm hoping I can shut this thing up a bit now otherwise I don't know how I'm going to deal. Can't even hear the exhaust at idle. Any gearbox oil recommendations?

Any half decent bearing supplier should carry them.

Honestly I can hear a ceramic twin plate at idle from three cars back and windows up

It's something no one likes

I'm spewing haha, like I said I was prepared for the clutch rattle but not for this rollover noise that's twice as loud as the clutch! What clutch are you running?

After a quick search looks like a lot of fellas are using penrite 70w-75 and is ok, disregarding cost what is the best? I don't care how much 5L of oils going to cost me if there's a chance it will fix the noise a bit. Is mainlube or redline any good and what weights?

I wouldn't put 70w-75 in it. The tr6060 needs a lighter weight oil. Penrite MGO floated my boat when I still had a manual car. Seriously ring Mal and discuss with him. He's the Tremec agent.
