My local pub used to knock up a really good one. Nice thick breast. Great crispy crust. Napoli sauce topped with sautéed bacon pieces covered with golden cheese and sour cream. Unfortunately the genius in the kitchen moved on and this example of poultry perfection has gone with him.

And so the quest has begun. For I must find my new Parma nirvana.

Name the bistro, chop house, pub or restaurant that serves your favourite parmigiana.

P.S. I thought of asking the mods to start a new thread in Vic sub forum but I'm sure no matter where your located someone else might be interested in trying your preferred eatery.

If I want a really good Parma ill make my own. I am honestly yet to find an establishment that can knock out a good Parma consistently.

I'm very picky though as its such a simple dish it needs to be top shelf or it won't get a second look. That pic you posted loses huge marks already by having the generic and rather flavourless boiled veg on the side....

I obviously take my Parma very seriously...

I'm actually writing a book on my parmigiana conquests. Have had some really good ones along my way but any Parma that substitutes the ham/bacon with eggplant can go get fuc.ked

The Ettamoggah pub in Kellyville ridge has 10 varieties of Parma. I rate most of them pretty highly

Oriental Hotel at Tumut would have to be one of the best I've had.

Made with a breast off what I assume to be a size 50 chook and that fkn hot it burns the roof of your mouth, but that just adds to the experience.

Runner-up would be from the Kenilworth pub (sunshine coast hinterland). So moral of the story...old country pubs that are not owned by woolies or wesfarmers.

Yeah that was just a generic photo Wingnut. Gotta agree with you chips over veggies all the way. It has to be good quality ingredients and keeping it simple is key. Bacon over ham is a bonus! Soggy chips or one of those flattened prepackaged heart shaped schnitzels is a no no.

Here's some of the Victorian Parmas that I will be trying in the coming months:

The Imperial Hotel, Bourke St, CBD

The Commercial Hotel, Alexandria

Little River Pub, Little River (from the Mad Max cruise lunch break)

The Park Hotel, Abbotsford

Mrs Parmas, CBD

I'll post a photo of each and maybe a one or two sentence review. Any that you guys recommend I'll give a try as well.

Most likely be weekend visits and anyone and everyone is welcome to tag along for a feed!

Same goes for you guys. Post a photo of your favourite and try and get our collective mouths watering!

First stop will be The Imperial Hotel this Friday night.
