I remember someone saying they did a skid pan course and afterwards there tyres were really worn on the edges. Is this just a matter of having the correct tyre temperature to avoid this?

I had Nankang NS-II's on for my skid pan day and the only bad tyre was the left front. I think the Nankangs have a soft side-wall, but my pressures were ok.
