I pulled out my auto box last week and it was a sh*t of a job too, especially on car stands just not enough room. We found it not clearing aswell, then we realised 4 bolts holding it on around flywheel, undid those 4 and it just fell out. But that was auto, not sure how different manual is

Sounds like your torque convertor bolts, an auto should be removed with the convertor, a manual does not have this problem

does the exhaust need to be removed with the maunal T5 or it just makes it a little more easy?

Yes. You'll need to remove the front section of the exhaust.

There is a little ear on the top of the bellhousing on the starter motor pocket. This is what gets stuck on the firewall, and can make it tricky to remove. You must be careful when removing the transmission that you don't have the transmission on too much of an angle compared to the engine, as you could bend the clutch plate.

If you are refitting another T5, you can cut the ear off the bellhousing starter motor pocket, which will make it much easier to refit.
