Have got both. Fp all the way. Check reviews for how loud the unit is cos we just replaced our fp with some russel something or other, and you need farken earplugs to use it.

Three steaks after slicing, before trimming

30 days dry aged at home (scotch - Wagyu MB7+)

Ugly white fat to be trimmed off - outside "skin" to be trimmed off

The fat through the steak is the healthy, flavour filled bursts of flavour - not the bad fat

Cooking hot and fast - cut the steaks "thin" - crayon thick, not pencil thick, not paperback book thick

SPG (salt, pepper, garlic), quick fry in ghee (clarified butter - doesn't burn) and onto the plate.

Once on the plate, cut off the thinnest slices you can - each slice is an orgasm of flavour.

Bit of an experiment tonight... tried to take photos as I went through... so here goes ...

It's stuffed oven baked Italian chicken breast.

Firstly we decided aaron would have ham and cheese and I would have speck bacon, caramelised onion and cheese...
started by doing the onions slowly with a bit of butter and sugar 50fbf86d5779602c520431810a58ab67.jpg9b141d004f245b4ed5bef90c2b2d98ee.jpg

Then I cut up mozzarella, got some great quality ham and speck and got the Neapolitan sauce ready... and prepped the chicken breasts by removing the tenders and the sinue and cutting a slot down the centre of each breast. Big ones work the best ;)

f2a1d5a02544258d1e6a3c20284495db.jpg

Then I wrapped the mozzarella in ham/speck and stuffed it in the breast, then in mine I put the onions as well ...

Then put through a flower, egg and Panko crumb process like a schnitzel... then shallow fry just to brown...

292d0c330e3e8a7f22a018767c6e52ba.jpg

Before frying I also put about 3/4 of the sauce in the bottom of a baking dish... ready for the breasts to go into... after lightly patting with paper towel I put them into the tray with the sauce and then put the rest of the sauce on top of each one followed by some greated Pecorino cheese :)

59b81e2a67e5a17643278e8f0f7d8a98.jpg

This is after about 20 mins oven time, still in now, but they need probably 35-40 on 180 depending on the size of the breasts :)

Had an amazing seafood spread last night and big congrats to the wife for putting in so much effort. Went down to the main seafood place in the city and spent a good 4-5 hours preparing and cooking and the results were seriously brilliant

Fresh crayfish tails all dressed up with a buttery/garlic and spices added to it before oven baking

fresh king prawns, peeled, cut and panko crumbed with only egg yellows

salt and pepper squid tubes sliced

Fresh king George whiting lightly crumbed

Fesh flake

home made garlic loaf

chips, salad and beer

totally wicked stuff and definitely worth the hectic mess made of the kitchen haha but god dam the wife can cook
