heaps of people have... usually when they melt their stock one :) prevention of melting is one reason to do it... but realistically it makes no difference other than stylistic choice of the engine bay.

just need a fluid flush, by the sound of it, as "spongey" pedal feel is usually air in the clutch lines. Make sure the master cylinder isn't leaking/sucking at all (it sits directly behind the clutch pedal) and it should be fine with the stock reservoir.
