guess the recipe organic butter man

5 Eggs

5 Egg yolks

500ml Cream

500ml Milk

150g Sugar

1/2 Vanilla bean

Boil milk, cream, and vanilla bean.

Whisk together eggs and sugar, gradually add milk.

Pass through fine sieve.

Bake in ramekins in a water bath at 100°c for approx 45 minutes.

When cool coat liberally with demerara sugar and caramelise with flame torch or under salamander.

...and while we are at it, you common folk can exchange the demerara for coffee sugar or raw sugar (better flavour than white)
