I made an interesting dish today. 

 

650g kangaroo mince

1 tablespoon sambal

1 tablespoon minced garlic

1 tsp onion powder

1 tsp ground ginger

1 tsp sweet paprika

1 tin diced tomato

1 tin coconut milk

 

In a frying pan I browned the mince with everything except the tomato and coconut milk. 

 

I heated the tomato in the pressure cooker with the lid off and added the mince when it was done. 

 

I deglazed the pan with the coconut milk and when it started to boil,  added it to the pressure cooker for a total of 30 minutes under pressure. 

 

When I let the pressure out it smelt like fart which my kids quickly confirmed. In the pot it smelt like fish. They named it fart stew. 

 

I used a large serving spoon with holes and ended up with about 1 cup of liquid remaining in the pot. 

 

I ate the whole thing in one sitting except the last half a cup or so as the baby decided that she liked it too.

 

It taste great and nothing like a typical kangaroo dish. 

 

Definitely worth a crack.

Roo has always needed some fat added if I go more than a sear and eat - it's a lean meat

 

Coconut milk adds the moisture?

Yeah the tomato wasn't enough by itself so I quickly made the coconut stuff and added it. 

 

It was pretty soupy cos the pressure cooker holds most of the moisture in. That's why I used the serving spoon with holes.

 

It was more chewy than beef mince but it wasn't dry. I was worried it was going to be but it turned out ok.

If you're ever not sure... add bacon

 

 

ooohhhhh - got a belly today to make bacon out of

 

mmmm, got to take the skin off it before I make bacon out of it

 

crackling :)
